I have enjoyed owning and iPhone 3G and 4 (without the S).  The email app
that comes on the phone does everything I need it to with GMail via IMAP.
 All labels become folders and your sent/drafts are available.  Starred
items become "important" items on the phone and the read/unread status
is maintained too.

I'm not sure what more in addition to that you'd want to do, but if you
have anything special that the GMail app on Droid does beyond that, tell me
what and I can tell you if iPhone does it.

Also - the HTML interface for GMail works great in Safari on the iPhone
too, including the ability to work in offline mode.  It keeps mail in a
SQLite DB on the phone so that the app works even when you aren't connected.
