As far as I know there is NO direct easy way to do that.  Sorry.
There are some CF based custom tags that will tell you all of the column
names returned from a db query.  I would suggest just doing a select *
on each table, determine if the row exists in both tables, and then
immediately following do an insert onto the receiving table.

The alternative would be to figure out how to shut down the production
server and redo the Access to SQL 7 upgrade all at once and have it go
live immediately.
