200 degrees is nothing to worry about. When it starts going over 215-220, then be worried. My overheating point is 230. My 454 runs at 185-190 in the heat & humidity of NJ. It has a 180 stat and a stock 7 blade clutch fan with a stock 4 core radiator. My 350 in my 86 Cutlass is the same way.
