First, there is no "Google Chromium" -- Chromium is the open-source version and "Google Chrome" is Google's version.
Chromium (on Linux) has been VERY stable for me lately. I have over a hundred open tabs, and switch amongst them constantly without issues. The limiting factor for me seems to be available (free) memory. When there is little to no free memory left, Chromium doesn't crash, but it slows down and/or warns me that certain tabs are having problems, and those tabs are frequently are replaced with the "Snap" page. No problem, I simply free up some memory and refresh the page if I need to access it. You don't mention the platform on which you run Chromium... perhaps there is insufficient memory? The one scenario that still causes Chromium to lock up is when I click on a link to save it, then before the save dialog box appears, if I click on the link again (too impatient, lol), I am able to save in the 2nd dialog box, but the first one is frozen, as is access to Chromium thru the GUI. Chromium processes continue to run (including downloads), but I have to close it from the system task manager. This may not be a problem with Chromium per se, but one with the system file manager.
