Well, just to add some point about which app to use, I've
come to the same conclusion than Germán Andrés Schwartz...

AVI container, than I use Avidemux for the encoding (DVD, XVID, ...)
For the DVD creation I also use QDVDAuthor (the only one wich is
complete enough for custom DVDs)... and it works great...
