On the Cat 6k you can do IP Prec or DiffServ. Otherwise you have to map 802.1p to Prec or DiffServ. By summer a lot more models will be able to do this such as the 2900 and 4900, 4000, etc. Nortel already does this on their Business Policy Manager switch and it's pretty reasonably priced at $3000.
FYI, IP TOS is the entire 1 byte field within an IP packet and contains the IP Prec Bits (3 most significant bits in that field) or DiffServ Bits (6 most significant bits). You set those, not ToS.
