Brian, I can manage 7.2 kts with a clean bottom and the throttle wide open. It's not something that I do often or recommend. My typical cruising speed is 6.5 kts, which I can achieve at 2,800-2,900 rpm. I have the Yanmar 3GM30F engine.
You're talking about a lot of expense to go just a little bit faster.
