well, I don't manage a high volume mail server with cyrus (only 50 users and 6Gbytes worth of email), but there are sites using cyrus-imapd with millions of users.
<http://www.fastmail.fm> is one of them.
CMU (the developers of cyrus-imapd) own setup isn't that big, but they manage many thousands of users.
Take a look at <http://asg.web.cmu.edu/cyrus/config.html> and you'll see they have 26516 users and 203069 mailboxes.
