With these bars, though, the custard in the middle is always going to
be wet, which is the point of it, so would that not show up on the
tester? For cakes it works well, but this is something like a lemon
bar in that is has a top and bottom crust but a custard-like middle.
Sorry, I should have specified that this is the type of bar I mean,
not a cake-like bar.
