I love ribs, and the gooier the better. However, I'd rather make them and eat them at home, or have them delivered, than eat at a restaurant. I suppose that everyone else at BB King's has his/her hands and face covered. I just don't like doing it in public. However, if someone invited me to a rib place and even offered to drive me, I'd bring a bib, plenty of wet towels and go for it.
As for mixing recipes with my hands, there isn't any other way. I just wash my hands before I dig in. Fingers are just another cooking tool, and you don't even have to pull everything out of a drawer to find them.
