Smile, Sugar. That is another way to test when to flip. First, I feel the top to determine when it reaches the bubbly, almost dry stage. Then I gently lift the bottom with the spatula. If it comes off easily & does not stick, then I know it is ready to flip. . If it still sticks to the pan, I wait another minute or two & test again.
