Holly, That recipe is not trying to mislead you. It just wants you to mix the ingredients together until the dough is uniform in nature and holds together well so you can roll it out easily. I would think it would be mixed in a mixer with bread dough hooks or by hand. The kind of dough where you knead it for 10 to 15 minutes or so, is generally made with yeast and has to sit and rise, and often punched down and made into its shapes and let rise again before baking. There is a technique for kneading dough, but honestly, any method you use where you get in there with your hands and mix it until all the flour is incorporated, the oil is evenly mixed, and the dough is uniform and becomes elastic in nature is a good method to use. By elastic, it means that the dough stretches when you take it in two hands and doesn't break into pieces as you stretch your hands apart.
