Outlook and Netscape and I imagine others allow some sort of editing of a message, but I guess you are right - they do it by posting a new message and deleting the old one - never thought of it that way... so in theory, I guess that could work.
Would be VERY nice if it would work with shared folders too - wouldn't it reduce the load of somewhat?
