As I understand it, the reason that cameras still use FAT32 / exFAT is the simplicity of the implementation, since cameras have limited onboard processing power. But at least with the manufacturers all using FAT32, there is no hodgepodge of volatile proprietary formats to deal with.
To the OP, if you need your SSD to be fully readable and writable on both macOS and Linux, the only filesystem I have found that fits this bill is exFAT, which has most of the same shortcomings as FAT32 but does support large files.
