I'd rather use ~/.local/share/applications/darktable-git.desktop
Change the exec line to point the darktable git version :
Exec=/opt/darktable/bin/darktable %U
You may add the --library option to use a different database and avoid
any problem.
And change the name (otherwise you cannot differentiate the two)
Name=Darktable-git
X-GNOME-FullName=Darktable Git
