Head compiles just fine for me. What's the problem?
One reason: I guess some checks for gmime are missing from configure..
Did you run autoreconf -f -i? Gmime checks are enabled alright.
second reason: my gmime libs aren't up-to-date
You need gmime-2.0 or better. gmime-1 won't do.
