The body and the DKIM-signed headers. E.g. gmail by default signs:

h=mime-version:date:message-id:subject:from:to:content-type

and Yahoo:

h=X-YMail-OSG:Received:X-Rocket-MIMEInfo:X-Mailer:Message-ID:Date:From:Reply-To:Subject:To:MIME-Version:Content-Type
