I believe it adds a file to /etc/apt/sources.list.d/, which achieves the same purpose, but doesn't touch your actual sources.list file. If you don't want it to do this, you can touch /etc/defaults/google-chrome before installing. Still, yeah, I'm not happy about this sort of thing as default myself.
