Nothing! :-)  However on my systems I see:-

    chris@q957$ xdotool type 'foo"bar'
    foo@barchris@q957$ foo@bar

I'm running Debian GNU/Linux 13 (trixie).  I get the same problem on
two systems, one is a Lenovo T16 Thinkpad (laptop) and the other a
Fujitsu Q957 (mini desktop).

And the problem isn't in the echo command, I just tried:-

    chris$ echo 'str xx""yy'
    str xx""yy
