Because Apple has a vested interest in the Windows market, due to the  
huge number of iPod and iPhone users who only own computers that run  
Windows.  And presumably Apple feels that offering those people a  
better, free browser alternative is a good way to entice some fraction  
of them to use more Apple products.

The number of iPod and iPhone users who only own computers that run  
OpenSolaris are, I'd imagine, vanishingly small.  So there is little  
incentive for Apple to port anything to OpenSolaris.

(And IMHO, the Windows versions of iTunes and Safari not only look  
rather out-of-place on Windows, but are considerably buggier than  
their Mac equivalents.  I can't imagine any OpenSolaris versions would  
fare much better.)
