The GDM themes are in /usr/share/gdm/themes.  They are defined by an
XML file that you will find in that directory.  You can modify the XML
file to customize the theme the way you describe.  Might be best to copy
the theme files into a new directory /usr/share/gdm/themes/MyTheme or
something, and then set your theme to this so it doesn't get overwritten
on upgrade.  Docs for editing the theme files is here:

By default there is no screen saver in GDM.  If your monitor supports
power saving, the monitor will go into powersave mode.  If you want
a screensaver in GDM, I understand some users use the GDM
"BackgroundProgram" configuration option to enable this.  Might search
around on Google to see how this is set up normally.  I've never tried
it personally.
