I typically use Ubuntu for the management server; however, today I needed to install CloudPlatform (the Citrix-branded version of CloudStack) on CentOS and it seemed to work fine with XenServer (I didn't try it with VMware).
I had my NFS share for secondary storage on Ubuntu still, though.
