Just to get sure we are on the same page: are you trying to connect to
OpenChange server using evolution (with IMAP account) or evolution-mapi
(with MAPI account)?

I assume the later option, but want to get sure.

It would be useful indeed.

Your openchangeclient preliminary outputs makes me think you shall be
missing a SOGo configuration parameter that prevent from fetching data
correctly. That may be trusted OC server/IMAP server or lack of password
in mapistoreURI. The Samba log would definitely help figuring this out.

OK, I have narrowed this down to my use of Dovecot 2.1.13.

I installed again exactly as per the openchange instructions except for changing the domain name and the ipaddress and it worked. I then installed again, but this time I changed the username and used bind9.9.2 and again it worked. I then swapped Postgresql for Mysql and again it works, so as the only major difference left is the use of a newer version of Dovecot, this must have been the cause, but I thought that I had configured it correctly, well we all know what thought did ;-)
