I don't know the context, but one of my favourite forms of bread is
the Doris Grant loaf, which is *much* easier than any other
yeast-based bread to make (really almost as easy as soda bread). An
odd on-line recipe here:

Though that overcomplicates it. I find that I can just whip the
ingredients together in my (warmish) kitchen, rise for 30 mins or so
and then cook. Whole process doesn't take much more than 1 1/2 hours
from start to cooked bread.

The bread is pretty dense (though you can rise it more if you don't
like it that way). That's the kind of bread I grew up with and I much
prefer it to the chorleywood style foam rubber that passes for quality
bread.

Works very well with weaker flours like spelt and kamut.
