YMMV We have our Linux workstations printing to HP printers and plotters from nuanced CAD applications (Cadence IC, Mentor Graphics Board Station, etc) without issue. In some cases, the HPGL2 language is leveraged for significantly faster plots than Postscript. The Xerox MFPs have been a horse of a crankier color.
