I've been playing some more... The "writing to stdout" issue was my fault, not libao... but we won't need libao anyway.
I'm now writing raw audio out to a named pipe (which I'm manually converting to wav using "sox"). I reckon it'd be possible to automate the conversion (either to wav, flac or mp3) using the "custom-types.conf" file in a similar way to Wave Input. I'll stick the code on github if I get a proof-of-concept working.
