I'm not sure what exactly is causing your problems, but I can say that it's not some generalized unreliability of the SB software that is making your playlists go wild. I have up to eight SBs running on my system, sync'ing up to 3-4 players, and have never encountered what you describe.
I do recommend that your server be wired to the router, at a very minimum. To the extent you can wire more of your SBs to the server, either via Homeplugs or standard ethernet, that also can't hurt. How big are these playlists? LMS has always had issues with handling really big playlists, but by really big I mean thousands of tracks.
