You select the source of the stream within the Nicecast interface.
If, for eample, you chose iTunes to stream audio files from, no other
apps audio would be streamed, that includes VoiceOver, DVD Player, or
anything else. As for Shoutcast, I'm not sure. You should check with
RogueAmoeba.com
