Hi
The easiest way to accomplish this would be to make a playlist, then
set your mini to sync with that specific playlist. Anything you add to
that playlist gets added, anything you delete from it gets removed.
For podcasts and such you can set which episodes are to be synched
(newest, all unplayed, all episodes, etc).
