Using as reference the DSC presenter available at OARC and a time fram of one month in the past, I could see

F-root, between 40 and 45% of the queries announce EDNS0 capabilities.
Nominet (UK), around 50% +- 5%
E-root, around 40%
C-root, around 42%
.CL, around 60%

If anyone else on the list is using DSC, could try


We (as in Autonomica) see 50-70% over servers and services.
