Hi Kevin, there are in fact many options how to export data from DSpace. Most prominently OAI which lets you define many metadata formats, but also some package-like formats as described in the System Administration section [1]. Since you're interested in export of particlar metadata fields into Excel, I'd recommend you to use the Batch Metadata Editing Tool, which can export a CSV [2] with all the metadata of a specified site/community/collection/item.
