YES... the current MacOS X Server does run on 603ev, I have tried running it on a 
80/2G PB3400c/240 before.... but a word of warning: there's no power management and 
it's VERY VERY SLOW on 603ev! However it runs very well on 604e (PowerSurge-class) of
machines-I have 2 8550/200 running it back in office.
