I have run OS X Server on my 2400, both pre- and post-G3 upgrade.  It 
takes a little bit of trickery to get the installer to do its thing, 
but once you're past that it works quite well.

Only time will tell if the "Client" version will still work on older 
machines.  Since Client is supposed to have a rewrite of the driver 
subsystem (and therefore the drivers), the drivers for older hardware 
present in the current MacOS X may get dropped.

The reason why OS X runs on the 2400 at all is that Server was 
originally developed on the 8500, and one of the developers also made 
sure that the 3400 worked, because he owned one and wanted to run OS 
X on it.  Since the 2400 is practically the same as the 3400, it 
works (you just have to fool the installer into thinking it is a 
3400).

As you mention, Apple doesn't support any of this, and there are no 
guarantees as to performance or reliability when running OS X on 
unsupported hardware.  Compatability with the processor isn't really 
as much an issue as the fact that Apple did not include the 2400, 
3400, or any of the other unofficially supported machines in their 
testing matrix.  Without full testing, it's all too easy to have the 
odd machine-specific bug crop up (for example, a crash that only 
happens on first revision 8500 motherboards).
