One thing that may slow the echoServer down is to have
activated logging on it. If you don't need to do that...don't do that.

AFAIK, there's no easy way to change the options that the
VNC Viewer connects with. But *after* it connects, you can right
click on the border of the viewer, and change the options of that
session.
