Samantha, as a point of clarification - the EDI (especially X12) standards are graphical character based and NOT on bytes. So any blocksize would be based on characters and not bytes.

It could also refer to the old school practice of wrapping EDI data in 80 byte wide blocks. The mainframe translators I used to work with did this and I still have one partner who requires it sent to them that way. They are an FTP partner otherwise the VAN would do it for me. You take streamed EDI data and remove all the CRLF's and then you wrap it, insert CRLF, every 80 characters so it looks like a block of data. When I receive their data I have to remove all the CRLF and then it looks streamed and the translator will process it. Wrapping it 80 bytes wide takes another step or two.
