You could go to the Elecraft Web Pages and look up the manual for the standard KAT100, identify the cabinet components that are needed and order them as spare/replacement parts. The manual assembly instructions should give enough detail on what these parts are and what's needed. I'm sure some of the parts are common to the EC2 ( bottom panel and parts ) The main difference is the side panels and front/back parts.
