I typically sort by date sent rather than received because I use
fetchmail to pull all my mail from various accounts into a central IMAP
server every hour. The date received on all my mail tends to be right
around the hour it was fetched while most people have their clocks set
to auto-sync and the date sent is usually a better indicator for me.

A mail client should be flexible enough to allow the user select which
columns they're interested in, so Letters should allow users to select
which date they prefer to sort on, but requesting a common e-mail field
be removed seems pointless.
