The sender does. And his/her lawyer may want it. And his/her tech support that needs to troubleshoot e-mail issues. Same with all the Received headers that servers stamp in the message as it passes through. I typically sort by date sent rather than received because I use fetchmail to pull all my mail from various accounts into a central IMAP server every hour. The date received on all my mail tends to be right around the hour it was fetched while most people have their clocks set to auto-sync and the date sent is usually a better indicator for me.
