Successful icons do at least two of three things:

1. They are a strong and unequivocal representation - not far from the 
application/function metaphorically - that is quickly recognised by almost 
everybody.

The obvious choice for email is an envelope or a stamp - what could be more 
on-target? A postbox? Well, is the app about storage and delivery, or about 
mail?

2. They are simple - both in appearance and how they relate to the 
application/function.

Visual complexity (not to mention representational complexity) scales poorly

3. They look great.

Yes we can all blather on about what we personally like but I think to a 
significant extent we can agree that some icons - for example the firefox icon 
- just look great.

Letters.app needs a great icon.
