Thinking about your question, I was wondering how much time you might be spending in those parts of Emailer where the small font size is a problem. The easiest (KISS) way work around this (I think) is to resize your entire monitor screen resolution whenever the size of the font in Address Book, Browser, Folder List views is too small to suit you. For the majority of *my* time on Emailer, I'm working with Messages (which font is selectable.) I'm certain there are more-informed users that have a "cleaner" solution.
