Some of us have been using a handy script called Trash attachments (or 
its partner, Trash message and attachments) to deal with this problem. 
You use it before deleting.  If you go through the whole mail folder 
using Option > to trash individual messages, you can also use the Trash 
attachments script to trash individual attachments without taking you out 
of the folder.
