I just did some checking, and Basilisk II claims to work under OS X up 
thru 10.4, and has support for ethernet (which is kind of important that 
networking works for an email client).

Basilisk II is a 68k mac emulator that will emulate either a Mac Classic 
(System 0.x thru 7.5.5) or a Mac II series machine (System 7.x thru 8.1) 
depending on the ROM image used.

In either case, Emailer should run on Basilisk. Now, if Basilisk will run 
on Intel OS X I have no idea, but it might be fun to try it out. It will 
take a little bit of work no matter what, as I'm sure the rom files are 
not bundled with the emulator (that gets into copyright problems with 
Apple), and an emulator drive file would have to be setup and configured 
with the correct OS version.

So I guess the first step is to figure out which Mac II series roms it 
can work with, and do I still have a compatible one kicking around here 
so I can image the rom (I knew there was a reason I didn't want to get 
rid of my Mac collection... too bad I didn't think of it before sending 
all the machines off to new homes!)
