Excellent tip!  I keep forgetting to put a subject in whenever I am
forced to use Mail.

I found that I could add send-only address aliases by simply  
adding them
to the Email Address section in the Accounts pane, separated by  
commas.
This does not work in Gyazmail so that is certainly one attribute  
of Mail!

Quite right. Unfortunately it doesn't* appear to let me allocate a  
name to the email address so I'm left with a drop-down list of email  
addresses that mean absolutely nothing to me!

*Or does it?
