Keeping the attachment as part of the email has its upsides. Just
think about how often it came up on the Emailer list asking how to
keep the attachments linked to the email after moving the database
around between machines.
I think many business users like the idea of keeping attachments as
part of the email, so they never have to worry about losing the
attachments. Also, I think from a low power user standpoint, doing it
this way is much less confusing.
However, I do agree with the major downside that it increases your
email database size dramatically, and with as many mail clients out
there that have problems with large databases, I also agree, it can
spell disaster for many users.
All that said, in Mail, if you don't want to keep the attachment with
the email, you can choose to remove the attachment in the Message
menu. Alas, I believe this is done only on demand and there is no way
to set it to always happen. Although, it may be possible to write an
AppleScript rule that will automatically save the attachment to a
folder and then remove it from the email (and stick in a note on the
email saying where the files were saved to).
