When you use the word beginner I'd say forget all the experimental stuff and just get a desktop PC. I just purchased this setup and the latency is really great, usually < 9000 with an occasional 13300.

Personally, I would go with a BBB and machinekit for a 3D printer. This is really based on size, but you don't need as much functionality with a 3D printer. These are good motors for a 3D printer. They have very similar specs to the Ultimaker motors.
