Hello,
The solution is the selection of "Large".
By this, I could change the fonts size of applictions.
That is, 'font size selection' on settings panel won't work!
Isn' this a bug?

Which distro are you using?
In openSUSE leap 15.2, there doesn't exit xsettings command.
There exits xsettingsd, but very old.
Or, are you using gnome-control-center?
