Paul has already partially answered this, but I would like to be sure I know what question you are asking: Are you asking about the account use when you reply to a message sent to you, or are you asking what account will receive the message when other send to you?
In the former case, there is a preference setting as to what account will be used, the default account or the account that received the message.
