First, there is no default keyboard shortcut for View Source, so you do need to define one. You may have to quit and relaunch Entourage to get the shortcut to show up. I have three defined. The most common problem is not quite spelling the command name exactly right, but I doubt that is the problem here. You do have to duplicate any capitalization. Control-S is possibly a system-wide shortcut for something; I know it used to be used a lot in VT100 terminals...like Ctrl-M which duplicates "Return" (try it) or Ctrl-I for Tab.
