Au contraire, monsieur Frakes. :-)  I actually inspected the
com.microsoft.Entourage.plist file and found the following after adding the
keyboard shortcut that Peter mentioned in his post:

    <key>NSUserKeyEquivalents</key>
    <dict>
        <key>To UPPERCASE</key>
        <string>^U</string>
    </dict>
