I just looked it up in the 380EX manual, and you are right.
All modes use ETTL with the 380EX (and 420EX I presume as well).
There is no way to disable it (when mounted directly on an EOS
50 or later body). Bummer. Better not use it as a litelink master.

Can E-TTL be disabled by taping over one of the flash contacts?
If not, I know you can do it by putting any of the flash adapters
except the off camera shoe cord 2 between the camera and flash.
Probably one of he flash voltage reguator things would do it as well.
Not as convenient as a switch, but better than nothing.
