I, and many of the developers I was working with at the time, eventually stopped using Bugzilla because it seemed to be overly complex. There too many features and things to track, it became cumbersome and a bit overwhelming.

That's too bad. I've found Bugzilla to be one of the better bug tracking tools. It's visually hideous in places but all the fiddly bits have a purpose. It's also rather extensible; I've seen some interesting hacks with automated tests kicking open bug entries on failures.

Has anyone used a simple bug tracking tool that they really liked?

Have you tried Mantis - http://www.mantisbt.org/ ? It's fairly light and not quite as cluttered as Bugzilla. Installation is trivial and it is handy as a drop-in tracking system where one does not exist. It's not perfect, but as a lesser alternative to Bugzilla there are far worse.

If you have a budget, FogBugz is hella sexy for $100 a seat.
